These chocolate peanut butter cups are delicious and the perfect alternative to all the Halloween candy full of extra unhealthy ingredients!
These cups have THREE ingredients!
1. Coconut Oil
2. Smooth Peanut Butter (or any kind of nut butter of your choice)
3. Chocolate protein powder (I used Vegan Chocolate Shakeology)
Place 2 Tablespoons of coconut oil in a microwave safe bowl. Microwave for 30 seconds until the coconut oil is liquified (my coconut oil was already liquid..AZ heat! lol So I needed more than 2 Tablespoons...I'm an eyeball it kind of girl anyways). Stir in 4 Tablespoons of chocolate protein powder.
In a muffin tin or mini muffin tin, divide the chocolate sauce evenly between 6-8 spots in the tin. Place in the freezer for 5 minutes.
Pull the muffin tray out of the freezer. Place a dollop of peanut butter of top of each frozen chocolate disk.
Repeat Step 1 and use this to pour on top of the peanut butter layer
Place the muffin tin back in the freezer and leave in there for at least 30 minutes. I found 45 minutes was perfect.
I used a pointy knife on the edges and they slipped right out of the tin easily!
Store in the freezer and try to eat only one :)
